Alternative Christmas Cake

If you’re not a big fan of fruit cake and fancy an alternative here’s an idiot proof carrot cake recipe.  It has all of Christmas smells of orange and cinnamon biut if lighter and as it contains carrots surely it was to be one of your 5 a day!

I’m afraid I can’t remember where I got this recipe from as I’ve had it written on a recipe card for years.

To make you’ll need….

  • 175g light muscovado sugar
  • 175ml sunflower oil
  • 3 large eggs, lightly beaten
  • 140g grated carrots
  • 100g raisins
  • Grated zest of an orange
  • 175g self raising flour
  • 1 teaspoon bicarbonate of soda
  • 1/2 teaspoon grated nutmeg
  • 1 teaspoon grated cinnamon
  • Frosting: juice of half an orange, icing sugar and 2 packs of cream cheese

Preheat your oven to 160c

Oil and line an 18cm Square cake tin with parchment Tip the sugar into a bowl, pour in the oil and add the eggs. Lightly mix with a wooden spoon.

Stir in the grated carrots, raisins and orange zest Mix the flour, bicarbonate and spices in a bowl.  Lightly mix the ingredients Pour the mixture into the tin.

Cook for 40-45 minutes until it feels firm and springy.

Cool the tin for 5 minutes then turn out and peel off the paper – cool on a rack.

For the frosting I usually mix 2 tubs of cream cheese with the juice of half an orange then add icing sugar (2-3 tablespoons) and mix.  Pop in the fridge to allow it to cool and stiffen up.

Wait until the cake is completely cool then spread on the cake.  Finish with orange zest.
