I fancied something a bit different for breakfast this morning and had a couple of avocados in the fruit bowl so thought I’d indulge!
Apologises for the photo but don’t let that put you off – it was delicious.
Half an avocado, crushed in a bowl. Add a couple of teaspoons of freshly squeezed lime juice. Chop up some parsley and a couple of ripe cherry tomatoes and season with salt and pepper. I like spice so also added a few drops of chilli sauce to give it a little bit of a kick
